Don't be intimidated by making scones, they are really easy to make. I used Organic Valley Egg Nog which is naturally gluten free.

Go ahead and use whatever eggnog you like. Store bought or homemade, they both will be crazy delicious in this recipe.

I only used ⅓ of a cup in the entire recipe but these scones aren't necessarily low fat. But it is the holidays, right? And who isn't looking for an easy recipe?

I used to hate scones because they were always so dry. The funny thing is, the "dryness" is exactly why I love them now.

I had a delicious scone while on vacation in Napa with my husband many years ago. It was so delightfully delicious and I even had two.

I couldn't believe how incredible it was and that I missed out on them for so many years.

Well, that's over.

These eggnog scones are perfect for Christmas breakfast and even better with a nice hot cup of this Eggnog Latte, Apple Chai Latte, Low Carb Bulletproof Hot Chocolate, Chamomile Latte or even some Spiked Apple Cider or Slow Cooker Mulled Wine.

Why You Should Make These Gluten Free Eggnog Scones

I can't tell you enough how simple these are to prepare. They might look fancy, but really anyone with minimal baking experience can make these.

Go ahead and dunk these babies right into your coffee or tea. I promise you will love them.

I made these eggnog scones gluten free because I love experimenting with different gluten free flours. You will be surprised at the amazing texture and consistency. I learned so much writing The Everything Wheat Free Diet Cookbook!

Even people that don't eat a gluten free diet love these scones. No one even has to know they are gluten free!

Recipe Ingredients

  • Gluten-freeall purpose flour - This gluten free flour is so easy to bake with and extremely versatile for all of your gluten free baked goods.
  • Coconut flour - Coconut flour is light, naturally sugar free and low in carbs which makes it extremely versatile for low carb baking. I always usethis coconut flourfor my baking. I love baking with both almond and coconut flour for the perfect texture.
  • Xanthan gum - This is a thickening agent used in gluten free and low carb foods. It is found in most grocery stores or you can buy it here.
  • Unrefined sugar - This can be whatever sugar you have in the house. I like to use unrefined sugar because it's minimally processed and contains some nutrients. You can use maple syrup, honey,coconut sugar, or even try a sugar free alternative such asMonk fruit.
  • Coconut oil - I love using coconut oil in my treats to cut down on dairy andthis coconut oilis my favorite. On the other hand, you can easily use the same amount of butter in this recipe I you'd like to use that.
  • Eggs - I use cage free, organic eggs for better taste and quality!
  • Eggnog - You can use my Skinny Peppermint Eggnog or buy some at the grocery store.
  • Vanilla extract - I use pure vanilla extract which doesn’t contain any artificial flavors or additives, it’s just pure vanilla made from alcohol. I usethis one.
  • White chocolate chips - You don't use many chocolate chips in this recipe, so use whatever you have in your house. I like these regular white chocolate chips or these sugar free ones.

Recipe Tips

I've made these so many different ways. I've used dark chocolate chips, drizzled milk chocolate on top, I have even added cranberries! And let me tell you, cranberries made a lovely addition.

So delicious, slightly tart and festive.

The idea is that these are totally versatile and customizable. Add whatever you'd like or whatever you have in the house.

Try to get creative and add some nuts, fruits and different chocolate. I just made these with my Skinny Peppermint Eggnog for a fun peppermint twist!

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • ¼ cup coconut flour
  • ½ teaspoon xanthan gum
  • ½ cup unrefined sugar
  • 2 teaspoons gluten-free baking powder
  • teaspoon salt
  • ½ cup coconut oil
  • 2 large eggs
  • cup eggnog
  • 1 teaspoon wheat-free vanilla extract
  • ¼ cup white chocolate chips more for melting and drizzling on top

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper or use a silicone mat.

  • In a large bowl, mix together the flours, xanthan gum, sugar, baking powder and salt. Work in the coconut oil until the mixture is crumbly.

  • In a separate bowl, whisk together the eggs, eggnog, and vanilla until frothy. Add to the dry ingredients, stirring until well blended. The dough will be sticky.

  • Fold in the chocolate chips.

  • Drop the dough onto the parchment paper or silicone mat and form into a circle in the center of baking sheet. Cut circle into 8 triangles.

  • Sprinkle the scones with extra sugar if desired. Bake for 15–20 minutes, or until golden brown. Remove from the oven and let cool for at least 5 minutes before drizzling extra melted white chocolate of desired.

Notes

To store in the refrigerator: Wrap in parchment paper and place in airtight container or plastic bag and refrigerate for up to 7 days.

To store in the freezer: Wrap in parchment paper and place in airtight container or plastic bag and freeze for up to 3 months.
