This Jammie Dodger Blondie recipe takes an iconic British biscuit and teams it with white chocolate and raspberry jam for a dreamy blondie.

Jammie Dodgers are crisp shortcake biscuits (cookies) filled with a chewy raspberry or strawberry flavoured jam.

They get their unique name from a 1930's British comic book character, Roger the Dodger from The Beano! If you're from outside of the UK, the most similar cookie is probably a raspberry/strawberry Linzer cookie, although they tend to contain almonds in the dough.

I actually have a giant jammie dodger recipe, so if you like, you could make some of your own and then use them in this recipe!

These Jammie Dodger Blondies are made extra special with loads of white chocolate chips and a really generous jam (jelly for US friends) swirl, alongside plenty of crisp Jammie Dodgers throughout!

The experience of eating a Jammie Dodger Blondie is a bit special. It's like eating a gooey, chewy creamy and creamy slab of Jammie Dodger!

To make your Jammie Dodger Blondies, you'll first make a super moist blondie batter with melted butter, soft brown sugar, eggs, vanilla and flour.

Once the batter is ready, you'll fold in lots of white chocolate chips and then pour half of the batter into a lined tin.

The assembly really is the best fun as you spoon big blobs of jam over the top and then top with Jammie Dodgers. After that, you'll pour in the rest of the batter and repeat with more jam and dodgers.

Then it's into your preheated oven for 25 minutes.

You'll only need to bake the blondie slab until it firms at the edges, but it should still be soft in the middle. This is because the blondie will set as it cools down - cooking it any further will dry your blondie out.

Once your tin of Jammie Dodger Blondies is cooked, you'll leave it to cool, then transfer it to the fridge to set overnight. This is, I know, a real trial of patience, but it will give you outrageously fudgy and tender blondies with perfectly crisp and shiny top - perfect for ice cream or on its own!

For the blondie batter

  • 240 g (8.5 oz) slightly salted butter melted
  • 350 g (12.3 oz) soft light brown sugar
  • 1 tsp vanilla extract
  • 3 medium free range eggs room temperature
  • 275 g (9.7 oz) plain white flour (all purpose flour)
  • ½ tsp (0.5 tsp) baking powder
  • 200 g (3.5 oz) white chocolate chips

To assemble

  • 450 g (15.9 oz) seedless raspberry jam
  • 250 g (8.8 oz) Jammie Dodgers some broken, some whole

Make the blondie batter

Preheat your oven to 180C (160C fan / 370F).

Cube the butter into a bowl and melt in the microwave or on the hob over a pan of water until just melted.

Jammie Dodgers are similar to Linzer cookies, only without the almonds. So if you don't have access to Jammie Dodgers, you could also use Linzer cookies.

Yes, this recipe is super easy to make! It's a classic blondie batter, mixed with white chocolate and swirls of jam and studded with Jammie Dodgers.

To make the blondie batter, you'll melt your butter and mix it with the soft brown sugar before adding eggs, flour and baking powder.

The only bit of kit you might not have for this recipe is the same-sized roasting tin. I used a medium-sized tin, which gave me approx two-inch thick blondies.

I also lined my tin with baking paper to make sure the blondies didn't stick, but you could also just grease a baking tray if you don't have any baking paper. Though it will make removing your Jammie Dodger Blondies neatly will make it more difficult.

For this recipe, I used standard white chocolate chips or drops. You can usually find these in the baking aisle of your local supermarket. If they aren't in stock, some regular white chocolate chopped into small pieces will work just as well.

What kind of jam should I use?

I used squeezy seedless raspberry jam, but you could use any flavour or style, as long as it's relatively runny. Whichever flavour jam you use, try to find the seedless kind so you don't end up spitting out seeds while eating your blondies.

How can I tell if eggs have gone off?

It's always best to use fresh ingredients when baking, especially eggs. It's essential to use fresh eggs, as they can behave differently in recipes as they get older and their quality declines.

You should never eat an egg that looks, smells, feels or tastes odd in any way. So if your egg has any discolouration, odd appearance, or a strange or foul odour, it is most likely off.

If your egg has spoiled, you should immediately throw it away and thoroughly wash any pots and utensils that have come into contact with it.

How can I tell if the butter has gone off?

At the time of writing (July 2022), Jammie Dodgers are vegan, but this could change in the future, as many jam-based products use animal-derived ingredients for thickening or colour.

This recipe isn't vegetarian At the time of writing (July 2022), Jammie Dodgers and Jammie Dodgers Minis are listed as vegan! So if you swap the egg, butter and chocolate for vegan alternatives, you can make a vegan version.

  • I would recommend using Flora Plant Block for the butter, as it has a similar fat content to dairy butter (approx 80%.)
  • For eggs, Orgran Egg Replacer is a consistent egg alternative. I find it works best in a warmer environment, so if it's cold, try using some lukewarm water to mix it.
  • For white chocolate, you could use any supermarket's own brand of white chocolate. Sainsbury's makes a good tasing vegan white chocolate, but it may melt and cook differently. So it might be a good idea to find vegan white chocolate designed for cooking and melting.
  • Finally, most jam is vegan - but some brands might contain non-vegan ingredients, so check the label just in case.

If you want to make more or less of this recipe, then go ahead. The best way to scale this recipe up or down is to use a recipe converter calculator. It saves you the headache of working out quantities manually.

I haven't made this recipe in a different quantity, so I can't be sure of the cooking times for a smaller or bigger batch.

Usually, if you make a bigger batch of a traybake like blondies, you could try adding 10 minutes onto the cooking time and reducing the temperature by 10-20 degrees.

For a smaller batch, keep the temperature the same, but check on the blondies 15 minutes before the end of cooking time to see where they're at.

It will take a lot of observation and maybe some trial and error to change the blondie size. The timing may be similar or much longer/shorter. Just make sure your blondies are cooked through with a skewer test.

Can I make this recipe in a different tin/tray?

I used a medium baking tin to make these blondies, which allowed the blondie batter to sit at around 2 inches deep. If you don't have a similarly sized tin, you could use a couple of smaller tins or round cake tins.

  • Cube the butter into a bowl and melt in the microwave or on the hob over a pan of water until just melted.

  • Add the soft brown sugar and whisk together.

  • Next, whisk in the eggs until completely combined.

  • Add the flour and baking powder and mix until smooth - the batter will be quite liquid.

  • Add the white chocolate chips and fold in.

Assemble the blondie

  • Pour half of the blondie batter into your prepared tin and level off.

  • Spoon half the jam in large dollops over the blondie batter.

  • Top with half the Jammie Dodgers.

  • Pour the remaining blondie batter on top and level off.

  • Gently warm the remaining jam with a 15 second burst in the microwave, then spoon over the blondie batter. Swirl a little with the handle end of a spoon.

  • Top with the remaining Jammie Dodgers.

  • Bake for approximately 25 minutes until firm at the edges and a little under in the centre - it will continue to set as it cools.

  • Allow to cool in the tin, then chill overnight to make them easy to slice.

  • Slide the Jammie Dodger blondies onto a serving board and slice them into 12 squares (in a pattern of 3 by 4).
